This is a delicious Mexican twist on hummus! Makes a great dip for raw vegetables or baked tortilla chips, and a great spread for a sandwich or burrito.
Ingredients
3 cups black beans (or 2 cans, drained and rinsed)
½ medium red onion
2 cloves garlic
juice from ½ lime
½ avocado
2-3 Tbs fresh chopped cilantro (to taste)
¼ cup nutritional yeast
1 tsp cumin
½ tsp oregano
½ tsp chili powder
¼ tsp smoked paprika (Trader Joe’s)
½-1 cup water to adjust to desired thickness.
Instructions
Blend all ingredients in a high powered blender (like the Vitamix) or a food processor until desired consistency is reached.
