Black Bean Spread

This is a delicious Mexican twist on hummus! Makes a great dip for raw vegetables or baked tortilla chips, and a great spread for a sandwich or burrito.
  • 3 cups black beans (or 2 cans, drained and rinsed)
  • ½ medium red onion
  • 2 cloves garlic
  • juice from ½ lime
  • ½ avocado
  • 2-3 Tbs fresh chopped cilantro (to taste)
  • ¼ cup nutritional yeast
  • 1 tsp cumin
  • ½ tsp oregano
  • ½ tsp chili powder
  • ¼ tsp smoked paprika (Trader Joe’s)
  • ½-1 cup water to adjust to desired thickness.
  1. Blend all ingredients in a high powered blender (like the Vitamix) or a food processor until desired consistency is reached.
