Zucchini Hummus

I discovered that zucchini is a great addition to hummus, as it gives a creamy texture. Plus, it's a great way to pack in more veggies!
Ingredients
  • 3 cups chickpeas (or 2 cans, drained and rinsed)
  • 2-3 cloves garlic
  • 2-3 Tbs sesame seeds
  • 1 tsp cumin
  • Juice from ½ lemon
  • 1 tsp apple cider vinegar
  • 1 small-medium zucchini, chopped
  • Water to adjust thickness
Instructions
  1. Blend to desired consistency in a high speed blender or food processor.
  2. Serve over salad, on sprouted grain bread, or with raw veggie sticks (carrot, celery).
