I discovered that zucchini is a great addition to hummus, as it gives a creamy texture. Plus, it's a great way to pack in more veggies!
Ingredients
3 cups chickpeas (or 2 cans, drained and rinsed)
2-3 cloves garlic
2-3 Tbs sesame seeds
1 tsp cumin
Juice from ½ lemon
1 tsp apple cider vinegar
1 small-medium zucchini, chopped
Water to adjust thickness
Instructions
Blend to desired consistency in a high speed blender or food processor.
Serve over salad, on sprouted grain bread, or with raw veggie sticks (carrot, celery).
