Sweet Potato Curry Hummus

This is a nutrient-packed, fun twist on hummus.
  • 3 cups freshly cooked chickpeas (or 2 cans, drained and rinsed)
  • 2 cloves garlic
  • 1 cup orange sweet potato flesh
  • Juice from ½ lemon
  • Splash of apple cider vinegar
  • 1¼ tsp curry powder
  • ½ to 1 cup water or aquafaba, adjusted for desired consistency
  1. Blend all ingredients together in high-speed blender or food processor.
