These are denser than traditional flour-based muffins, but they’re delicious and very satisfying and a great way to pack in extra veggies and fruits!
Ingredients
6 bananas
2 apples, chopped
4 cups rolled oats
2 cups wild blueberries
1 Tbs cinnamon
2 tsp vanilla bean powder
½ tsp cardamom
1 tsp nutmeg
2 medium carrots, shredded
3 cups Trader Joe’s California Kale, shredded
Instructions
Mix oats well with spices in a large mixing bowl.
Mash bananas until almost liquid, and add to oats with remaining ingredients. Mix well.
Use a scoop to put into silicone muffin pans and bake at 375° for 25-30 min in Breville Smart Oven Air (may take longer in conventional oven).
Allow to cool before removing from the pan. Enjoy!
