Nutrient Rich Muffins

These are denser than traditional flour-based muffins, but they’re delicious and very satisfying and a great way to pack in extra veggies and fruits!
Ingredients
  • 6 bananas
  • 2 apples, chopped
  • 4 cups rolled oats
  • 2 cups wild blueberries
  • 1 Tbs cinnamon
  • 2 tsp vanilla bean powder
  • ½ tsp cardamom
  • 1 tsp nutmeg
  • 2 medium carrots, shredded
  • 3 cups Trader Joe’s California Kale, shredded
Instructions
  1. Mix oats well with spices in a large mixing bowl.
  2. Mash bananas until almost liquid, and add to oats with remaining ingredients. Mix well.
  3. Use a scoop to put into silicone muffin pans and bake at 375° for 25-30 min in Breville Smart Oven Air (may take longer in conventional oven).
  4. Allow to cool before removing from the pan. Enjoy!
