This is great served warm, room temp, or chilled. It's a great breakfast or snack too.

  • 2 lbs sweet potatoes [approx. 5 medium]
  • 2 small, ripe bananas
  • 3 vanilla beans
  • ½ tsp pumpkin pie spice
  1. Roast the sweet potatoes [400˚ for approx. 1–1.5 hours]
  2. Let cool enough until able to handle.
  3. Scoop the flesh into a high-speed blender.
  4. Split the vanilla beans and scrape the seeds into the potato mixture. (Note: I used 1-1/2 tsp vanilla bean powder)
  5. Add bananas and spice, and blend.
