These are denser than traditional flour-based muffins, but they’re delicious and very satisfying and a great way to pack in extra veggies and fruits!

Ingredients
- 6 bananas
- 2 apples, chopped
- 4 cups rolled oats
- 2 cups wild blueberries
- 1 Tbs cinnamon
- 2 tsp vanilla bean powder
- ½ tsp cardamom
- 1 tsp nutmeg
- 2 medium carrots, shredded
- 3 cups Trader Joe’s California Kale, shredded
Instructions
- Mix oats well with spices in a large mixing bowl.
- Mash bananas until almost liquid, and add to oats with remaining ingredients. Mix well.
- Use a scoop to put into silicone muffin pans and bake at 375° for 25-30 min in Breville Smart Oven Air (may take longer in conventional oven).
- Allow to cool before removing from the pan. Enjoy!
