Zucchini Hummus

I discovered that zucchini is a great addition to hummus, as it gives a creamy texture. Plus, it's a great way to pack in more veggies!

Ingredients
- 3 cups chickpeas (or 2 cans, drained and rinsed)
- 2-3 cloves garlic
- 2-3 Tbs sesame seeds
- 1 tsp cumin
- Juice from ½ lemon
- 1 tsp apple cider vinegar
- 1 small-medium zucchini, chopped
- Water to adjust thickness
Instructions
- Blend to desired consistency in a high speed blender or food processor.
- Serve over salad, on sprouted grain bread, or with raw veggie sticks (carrot, celery).
